Free Oatmeal Date Cookies! (Dairy-free, oil-free, egg-free, sugar-free)


Ultra-healthy cookies! These oatmeal based cookies are very health-food diet friendly. Uses no dairy-products, no oils, no eggs, and no sugar (though it does call for 1/4 cup of honey or maple syrup). And the best part is, they're still very tasty!

Ingredients:
- 1/2 banana (mashed)
- 1/4 cup of honey (can substitute with maple syrup)
- 1 1/2 teaspoon of vanilla extract
- 1/2 cup of all-purpose flour
- 1 cup of old-fashioned oats (or rolled oats)
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/3 cup of rolled dates (or chocolate chips. or raisins. or nuts. or a combination of all four, if you so wish)

Directions:
1. Preheat oven to 350 degrees (F)
2. Mash banana, add honey and vanilla. Mix well.

3. Add flour, salt, baking soda, baking powder, and oats and mix well. 

4. Add in rolled dates (or whatever you decided to use). Mix until evenly distributed. You can also add more than 1/3 of a cup and play the "let's see how many dates/chocolate chips/nuts/etc this dough can hold" game.

5. Scoop dough onto baking sheet lined with parchment paper. Bake until cookies are firm and golden-brown on the edges (25-25 minutes in my conventional oven, but probably shorter in a regular oven).

Makes around 16 small-to-medium cookies.
 All done!

Alternatively, these also make pretty good snack bars, so for step 5, you could spread the mix evenly onto the baking sheet and then cut into bars after baking.
